SHRIMP BARBECUE
.4 lbs Large Green Shrimp .1 Cup Butter
or Margarine .1 Large Clove Garlic,Minced .1/2 tsp black pepper .1
tsp salt .1 cup parsley, minced
1.Peel and clean shrimp 2.Cream butter;
add remaining ingredients to thebutter and mix well 3.Cut 6 9-in
strips of heavy duty aluminum foil. Thencut each strip in half.
4.Divide shrimp equally on each piece of foil. 5.Topeach with 1/12
of the butter mixture, bring foil up around shrimp; twisttightly to
seal 6.Place shrimp packet on embers 7.Cook 5 minutes
STUFFED TROUT
.12 Medium Trout .3 Medium Onions,
chopped fine .1/4 lb butter or margarine
1.Clean the fish thoroughly; salt and
pepper the insides 2.Fill each fishabout 3/4 full with onion and
put a pat of butter on the top of the onion3.Wrap each fish
separately in aluminum foil 4.Bury in hot embers. Bake 20to 25
minutes
HAMBURGER DINNER
.12 Potatoes .12 Carrots .1 Large Onion
.3 lbs Hamburger .salt, pepper
1.Cut up potato in small pieces 2.Cut
carrot into sticks 3.Dice onion 4.Makea pat of 1/4 lb hamburger,
3/4 of an inch thick 5.Place the ingredients sideby side on a piece
of aluminum foil 6.Season; wrap in foil and put packetin the embers
7.Cook 10 to 20 minutes
Other combinations can be used, such
as: ham, pineapple, chicken, onions,and potatoes, Hot Dogs and
onions, Hot Dogs with cheese and bacon, Hot Dogswith apples and
cheese.
BEEF STEW
.3 lbs beef cut in 1-in. chunks .12
bacon slices (about 3/4 lb.) .12 tomatoes.6 onions
1.Place 1/4 lb. of beef, 1 slice of
bacon cut in pieces, slices of onionand quarters of 1 tomato in
aluminum foil packet 2.Cook in embers 30 to 40minutes. 2) Repeat
with rest of ingredients according to number being fed.
PIGS IN BLANKETS
.4 Cups Flour .2 Tbsp baking powder .1
tsp salt .3 Tbsp sugar .6 Tbsp shortening.Water or milk for desired
consistency .24 link pork sausages (or tinnedsausages)
1.Mix dough as for biscuits 2.Pinch off
small pieces of dough and flatteninto strips or elongated patties
3.Wrap each sausage (which has been searedin a hot pan) in a strip
of dough 4.Knead the sides of the dough togetherso that the sausage
is completely covered 5.Wrap in foil and cook for 15minutes.
POTATO-ONIONS
.12 Medium Potatoes .12 Medium Onion,
sliced in rounds .salt, pepper .1/4cup Butter or Margarine
1.Cut potato into 4 crosswise slices
2.Spread butter on each side of theslices 3.Cut ½ onion in rounds
and place between potato slices; saltand pepper them 4.Secure
slices with toothpicks or skewers 5.Wrap thesepotato-onions tightly
in foil 6.Bake in embers 30 to 40 minutes
KEBABS
Kebabs are good - You could buy the
bamboo skewers and put all sorts of stuffon them. Steak, onions,
peach, potato and kiwi fruit are good. Scouts(or cubs) will
love them.
The best kebabs are ones of the fruit
variety. Cut up lots of oranges,apples, pinapple, melons
,bananas or any other fruit you may have. Putall the fruit
out on a table, give each scout/cub a skewer and let them makeup
their own kebab. It works a treat, try it!
Spiders
Cut hot dogs in quarters, length wise
1/3 of the way from each end. Thisleaves a solid centre to put on a
stick or hot dog fork. Cook over open fire(the spider's legs will
curl), serve on a hamburg bun.
Grilled Lasagne
Sandwiches
Allow each Scout two sandwiches. For
each sandwich, you need two slices baconor ham and two slices
mozzarella or swiss processed cheese. Spread sour creamand tomato
paste on bread and sprinkle on a little oregano to flavour.
Frybacon or ham and put it between two slices of prepared bread.
Butter theoutside of the bread, fry, and eat.
Grilled ham and cheese sandwiches are
also popular with the Scouts, and theyare nice with noodle soup and
a side dish of fresh carrots.
Camp Tacos
This is a nice, easy dish.
Firstly fry ground beef with some taco sauceto spice. Put
into taco shells. Top with shredded lettuce, grated cheddarcheese,
diced tomatoes, and more taco sauce. Some patrols also bring
alongsour cream to add to the dish, and most have buns or bread
Tin Can Cooking
Another technique is to get a large tin
can, cut air holes in the bottonand put it in the embers. Then you
can fry eggs on the " hot plate " usingslices of grapefruit skins
as egg rings.
You could even take an unopened tin
(for example beans), make two holes inthe top
and put it over or in the fire. You'll
have piping hot food and no washingup.
WARNING - do not put a can
without holes in, over, or on a fire becauseit will explode
scatering its contents and metal all over the camp site (Trustme
it's happened!)
An Egg in an Orange
First of all take an egg and an orange.
Cut of the top of the orange. Emptythe orange with a spoon so that
the egg can be placed in the empty shell.Put back the top of the
orange and a little of the juice and place it ina (small) fire. The
egg will be boiled in the juice off the orange!
Foil Cooking
Take a double piece of aluminum foil,
put a hamburger on it, a little bitof butter or margerine, and any
or all of the following ingredients - carrots,potatoes (thinly
sliced so they will cook fast), onions etc. Cut upthe
vegatables and line everything up on foil and then go down the line
andput anything on that you want. Next, the foils are wrapped
and sealedand then placed on the fire. The fire should not be a
high flaming fire,but more like coals - in fact barbeque coals work
nicely too. Wait 10-15minutes. Find something to pull the foil
parcels out of the fire with.
